  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp melted butter
  • 2 (8 oz) pkgs softened cream cheese
  • ½ cup granulated sugar
  • ¼ cup sour cream
  • ½ tsp vanilla extract
  • 2 eggs (room temperature)
  • 1 ½ cups chopped fresh strawberries
  • 5 tbsp sugar (for topping)
  • 3 tbsp water
  • 1 tbsp lemon juice
  • 2 tsp cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 or 9×9 baking pan with parchment paper and lightly spray it.
  2. In a medium bowl, mix together graham cracker crumbs, sugar, and melted butter until well combined. Press firmly into the bottom of the prepared pan.
  3. In a large bowl, beat together softened cream cheese, sugar, sour cream, and vanilla until smooth. Add eggs one at a time on low speed until just combined.
  4. Pour the filling over the crust and bake for about 25-35 minutes, until the center is mostly set but slightly jiggly. Cool at room temperature for about 1-2 hours.
  5. Refrigerate for at least 3-4 hours before slicing into bars. Serve chilled.
