  • 75g unsalted butter
  • 32 oz cream cheese
  • 325g granulated sugar
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs
  • 120g heavy cream
  • 240g sour cream
  • 1 tbsp cornstarch
  • 23 tablespoons lemon juice
  • 1 lb strawberries, roughly chopped in large chunks

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into a springform pan and bake for 10 minutes. Let cool.
  2. Beat cream cheese and granulated sugar until smooth. Add salt and vanilla; mix well. Incorporate eggs one at a time, then blend in heavy cream, sour cream, and cornstarch.
  3. Pour filling over the cooled crust and bake for 60-75 minutes until slightly jiggly in the center. Allow cooling in the oven with the door ajar.
  4. For the compote, combine chopped strawberries, sugar, lemon juice, and cornstarch in a saucepan over medium heat until thickened (5-7 minutes). Cool before topping the cheesecake.
