8–10 slices turkey bacon, cooked and chopped
4 cups chicken broth
1 large onion, diced
2 large carrots, peeled and sliced
1 tbsp butter or olive oil
16 oz gnocchi
2 cups heavy cream or half-and-half
2 cups shredded cheddar cheese
Instructions
In a large pot, cook turkey bacon until crispy, then chop it into small pieces.
Sauté diced onions and sliced carrots in the same pot with butter or olive oil until tender (about 5 minutes).
Pour in chicken broth and bring to a simmer.
Stir in heavy cream, salt, black pepper, garlic powder (or minced garlic), thyme, red chili flakes (if using), and shredded cheddar cheese until melted.
Add gnocchi and cook until they float to the surface (about 2 minutes).
Stir in chopped turkey bacon, adjust seasoning as needed, and serve hot.
