  • 1 tbsp oil
  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 2 stalks celery (or 1/2 small celery root, diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 4 cups vegetable broth
  • 1/3 cup dairy-free cream
  • Fresh parsley (for garnish)

Instructions

  1. Heat oil in a large pot over medium heat. Add diced onion and sauté for about 3 minutes until softened.
  2. Stir in minced garlic, diced celery, carrots, potatoes, and spices. Sauté for another minute.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for about 20 minutes until vegetables are tender.
  4. Remove bay leaves if used and blend half the soup until smooth using an immersion blender.
  5. Mix the blended soup back into the pot, stir in dairy-free cream, and simmer for a few more minutes.
