  • 1/2 cup melted coconut oil
  • 1/2 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup chocolate chips

Instructions

  1. Mix the melted coconut oil, pumpkin puree, brown sugar, and white sugar in a large mixing bowl until well combined.
  2. Add flour, pumpkin pie spice, salt, and baking soda to the bowl. Mix until you have a smooth but semi-sticky dough. Fold in half of the chocolate chips.
  3. Cover the dough and refrigerate for at least one hour.
  4. Preheat your oven to 325°F (165°C) and line a baking tray with parchment paper.
  5. Scoop about 1.5 tablespoons of dough onto the tray, leaving space between each cookie. Flatten slightly and add extra chocolate chips on top.
  6. Bake for 12-14 minutes until edges are golden but centers remain soft.
  7. Let cool on the tray for 5–10 minutes before transferring to a wire rack.
