  • 4 1/2 tablespoons melted vegan butter
  • 1/4 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose plain flour (spoon and leveled)
  • 3/4 cup granulated sugar
  • 2 1/4 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup dairy-free yogurt (or unsweetened applesauce, room temperature)
  • 1/3 cup dairy-free milk (room temperature)
  • 1/3 cup neutral flavored oil
  • 1 tablespoon apple cider vinegar (or lemon juice, optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan.
  2. Prepare the strawberry filling by combining chopped strawberries, sugar, lemon juice, and flour in a bowl; set aside.
  3. In another bowl, mix flour, sugar, melted vegan butter, and cinnamon for the crumb topping; set aside.
  4. Whisk together dry ingredients: flour, sugar, baking powder, and salt in a large bowl.
  5. In a separate bowl, combine dairy-free yogurt, dairy-free milk, oil, apple cider vinegar, and vanilla until smooth.
  6. Combine wet ingredients into dry ingredients and stir gently until just mixed.
  7. Spread half of the batter into the prepared pan; layer with strawberry filling and top with remaining batter followed by the crumb topping.
  8. Bake for 65 minutes or until a toothpick comes out clean from the center. Let cool before slicing.
