  • 6 oz. heavy cream
  • 2 sticks unsalted butter, softened (for frosting)
  • 16 oz. cream cheese, softened
  • 1 Tablespoon espresso granules dissolved in 2 teaspoons vanilla extract
  • 6 to 6 1/2 cups powdered sugar

Instructions

  1. Preheat your oven to 325°F (163°C) and prepare three 8×2 inch cake pans by greasing and flouring them.
  2. Melt the white chocolate in warm milk until smooth and let cool.
  3. In a bowl, whisk together flour, baking powder, and salt.
  4. Cream together softened butter and sugar until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  6. Gradually mix in the dry ingredients and cooled chocolate mixture until just combined.
  7. Divide the batter evenly among prepared pans and bake for about 22-25 minutes or until a toothpick comes out clean.
