  • 2.2 lbs fresh yuzu (about 12 fruit)
  • 2.2 lbs white rock sugar
  • ½ cup lemon juice (for sterilizing)

Instructions

  1. Wash the yuzu thoroughly under running water and cut each fruit in half, removing any seeds.
  2. In a mixing bowl, layer the halved yuzu and rock sugar, gently pressing down to extract some juice.
  3. Transfer the mixture into two evenly filled mason jars and seal tightly.
  4. Let the jars rest in a cool, dark place for about 7 days, shaking gently every couple of days to dissolve the sugar.
  5. After a week, stir a spoonful of syrup into hot water or use creatively in various dishes.
