1 (16oz) jar of sliced tamed jalapeno peppers
2 tablespoons jalapeno juice
1/2 cup almond flour
1 teaspoon cajun seasoning
1/2 teaspoon salt
3 eggs
2 cups ground beef rinds
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
Instructions
Drain the jalapenos and reserve 2 tablespoons of juice. Pat dry with paper towels.
In three bowls, prepare your breading: combine almond flour, cajun seasoning, and salt in one bowl; whisk together eggs and jalapeno juice in another; mix ground beef rinds, garlic powder, and cayenne pepper in the third.
Dip each jalapeno slice into the almond flour mixture, then into the egg wash, followed by the beef rind mixture.
Place coated jalapenos in an air fryer basket in a single layer. Spray lightly with oil.
Air fry at 400°F for 6 minutes, flip, and cook for another 6 minutes until golden brown.
