  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked quinoa or rice
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1/2 cup crumbled feta cheese (or plant-based alternative)
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Halve the bell peppers lengthwise, remove seeds, and arrange in the baking dish cut-side up.
  3. In a medium skillet, heat olive oil over medium heat; sauté onions until soft (about 5 minutes). Add garlic and cook for an additional minute.
  4. Remove from heat; stir in quinoa or rice, chickpeas, feta cheese (or alternative), parsley, lemon juice, oregano, salt, and pepper until well combined.
  5. Fill each pepper half with the mixture and pour about 1/4 cup of water into the baking dish for steaming.
  6. Bake for 30 to 35 minutes until peppers are tender.
