  • 1 pound asparagus
  • 2 1/2 cups uncooked pasta (penne or rotini)
  • 2/3 cup sliced red onions
  • 1 1/2 cups diced tomatoes
  • 1/3 cup red apple vinegar
  • 2 teaspoons lemon juice
  • 1 1/2 teaspoons minced garlic
  • 1 teaspoon sugar
  • 2 teaspoons dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup extra-virgin olive oil

Instructions

  1. Boil salted water in a large pot. Cook pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. Blanch asparagus in boiling water for 3-4 minutes until bright green and tender-crisp. Transfer to ice water to halt cooking.
  3. In a mixing bowl, whisk together red apple vinegar, lemon juice, garlic, sugar, oregano, crushed red pepper flakes (if using), and slowly add olive oil until blended.
  4. In a large bowl, combine cooked pasta with asparagus, red onions, and tomatoes. Drizzle with dressing and toss gently until coated.
  5. Serve topped with shredded Parmesan cheese.
