  • 1/2 cup cherry tomatoes, halved
  • 15 oz can corn
  • 1/4 cup white balsamic vinaigrette
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 avocado, diced
  • Fresh basil for garnish

Instructions

  1. Cook the pearl couscous according to package instructions until al dente. Drain and cool.
  2. In a non-stick frying pan, heat olive oil over medium-high heat. Add rinsed corn, season with salt and pepper, and sauté until golden brown.
  3. Cool the couscous and corn completely—quickly chill in the fridge if needed.
  4. Halve the cherry tomatoes and dice the avocado while cooling.
  5. In a large mixing bowl, combine cooled couscous, roasted corn, cherry tomatoes, avocado, and vinaigrette. Mix gently to combine.
  6. Chill for at least 15 minutes before serving to enhance flavor.
