- 2 large eggs
- 2 cups rolled oats
- ¾ cup plain Greek yogurt (fat-free)
- ½ cup granulated sugar
- ⅓ cup peanut butter
- 1 tsp vanilla extract
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- Preheat your oven to 400 degrees F and prepare a muffin tin with cooking spray or liners.
- In a blender or food processor, combine all ingredients and blend until mostly smooth, leaving some oat texture.
- Pour the batter into the muffin tin, filling each cup about three-quarters full.
- Bake for 16–17 minutes or until a toothpick inserted comes out clean.
- Allow muffins to cool in the tin for about 10 minutes before transferring them to a wire rack.
