  • 2 ripe bananas
  • 2 large eggs
  • 2 cups rolled oats
  • ¾ cup plain Greek yogurt (fat-free)
  • ½ cup granulated sugar
  • ⅓ cup peanut butter
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 400 degrees F and prepare a muffin tin with cooking spray or liners.
  2. In a blender or food processor, combine all ingredients and blend until mostly smooth, leaving some oat texture.
  3. Pour the batter into the muffin tin, filling each cup about three-quarters full.
  4. Bake for 16–17 minutes or until a toothpick inserted comes out clean.
  5. Allow muffins to cool in the tin for about 10 minutes before transferring them to a wire rack.
