  • 22.5 lbs beef top round (cut into 1 ¼ inch cubes)
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 garlic cloves (minced)
  • 2 tablespoons fresh oregano (minced)
  • 1 1/2 teaspoons Kosher salt
  • Freshly ground pepper
  • A mixture of peppers, onions, tomatoes, or other vegetables cut into chunks

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, Kosher salt, and pepper.
  2. Add beef cubes to the marinade and coat well. Cover and refrigerate for at least 30 minutes.
  3. While marinating, chop your choice of vegetables into chunks.
  4. If using wooden skewers, soak them in water for 30 minutes. Thread marinated beef and vegetable chunks onto skewers alternately.
