  • 2 cloves garlic, minced
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch mixed with 1 tbsp water
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper, diced
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. Heat oil in a large frying pan over medium heat.
  2. Add chicken pieces and cook until golden brown (6 to 8 minutes). Remove from pan.
  3. In the same pan, sauté minced garlic for about 30 seconds.
  4. Stir in soy sauce, pineapple juice, honey (or brown sugar), and vinegar; simmer for 2 minutes.
  5. Combine cornstarch with water; add to the sauce to thicken it.
  6. Return cooked chicken along with pineapple chunks and bell pepper; cook for an additional 3 to 4 minutes.
  7. Stir in cooked rice until warmed through.
  8. Garnish with green onions and sesame seeds before serving.
