  • 1/4 cup granulated white sugar
  • 1/4 cup water
  • 2 cups graham cracker crumbs (about 12 full sheets)
  • 1/4 cup granulated sugar
  • 6 tablespoons salted butter (melted)
  • 2 8-oz packages cream cheese (room temperature)
  • 1/2 cup granulated white sugar
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest (or more)
  • 1/2 cup sour cream (room temperature)
  • 2 large eggs (room temperature)
  • 1/4 cup lemon juice (fresh)
  • Fresh blackberries
  • Sliced lemons

Instructions

  1. Preheat your oven to 350°F and bring cream cheese, sour cream, and eggs to room temperature.
  2. For the blackberry purée: Combine blackberries, sugar, and water in a saucepan, boil for 2-3 minutes, then simmer until thickened. Allow to cool.
  3. Prepare the crust by crushing graham crackers, mixing them with melted butter and sugar, pressing into an 8×8 inch baking pan, and baking for 9 minutes. Lower the oven temperature to 325°F.
  4. In a bowl, beat cream cheese with sugar and zest until fluffy. Add sour cream followed by eggs one at a time. Mix in lemon juice until smooth.
  5. Pour the filling over the cooled crust, dollop blackberry purée on top, swirl gently, and bake for 55-60 minutes.
  6. Cool for an hour then refrigerate for at least three hours before serving.
