  • 6 boneless, skinless chicken thighs
  • 8 cups chicken broth
  • 1 and 1/2 cups medium-grain rice
  • 1 large yellow onion (diced)
  • 2 carrots (diced)
  • 2 potatoes (diced small)
  • 2 tablespoons crushed garlic (divided)
  • kosher salt
  • black pepper
  • paprika
  • bay leaves
  • olive oil

Instructions

  1. Marinate chicken thighs in vinegar and lemon juice for at least 1 hour.
  2. Season the marinated chicken with salt, pepper, paprika, crushed garlic, and olive oil.
  3. Brown the seasoned chicken in a stock pot over medium heat for about 2-3 minutes per side.
  4. Sauté diced onion and quartered tomato until translucent; return browned chicken to the pot.
  5. Add broth and water; bring to a boil then simmer for 1 hour.
  6. Remove chicken, shred it, and return it to the pot along with rice and diced carrots; simmer for another 30 minutes.
  7. Add diced potatoes; continue cooking for an additional 15-20 minutes.
  8. Let rest before serving hot.
