  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground allspice
  • 1 cup shredded carrots

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two loaf pans.
  2. In a large bowl, cream the softened butter with granulated and brown sugars until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in mashed bananas and vanilla extract.
  3. In another bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, ginger, and allspice. Gradually add this dry mixture to the wet ingredients until just combined.
  4. Fold in the shredded carrots gently using a rubber spatula.
