  • 2 cups cooked chicken breast, chopped or shredded
  • 4 cups fresh spinach
  • 2 cups mushrooms, sliced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch casserole dish.
  2. In a large skillet over medium heat, add olive oil and sauté the onions and mushrooms for about 5-7 minutes until softened. Stir in the garlic for an additional minute, then add the spinach until wilted. Season with salt, pepper, and Italian seasoning.
  3. Spread the cooked chicken evenly across the bottom of the greased casserole dish. Layer the sautéed vegetable mixture on top.
  4. Pour heavy cream over the layered ingredients, then sprinkle with mozzarella and parmesan cheeses.
  5. Bake uncovered for 20-25 minutes until cheese is melted and golden brown. Allow to rest for about 5 minutes before serving.
