  • 3/4 cup packed brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs, at room temperature
  • 1 cup plain Greek yogurt or sour cream
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon kosher salt
  • 1/2 cup brewed coffee
  • For the Streusel Topping: 1/2 cup packed brown sugar, 2 teaspoons cinnamon, 3/4 cup all-purpose flour, 6 tablespoons cold butter, grated
  • For the Cream Cheese Layer: 6 ounces cream cheese, at room temperature, 1 1/4 cups powdered sugar, 2-3 tablespoons whole milk, 1/2 teaspoon vanilla extract, 1-3 teaspoons instant coffee, to your taste

Instructions

  1. Preheat the oven to 350°F. Butter a 9-inch bundt pan.
  2. In a large mixing bowl, beat together the butter and brown sugar until combined.
  3. Add the Greek yogurt or sour cream and vanilla; beat until smooth.
  4. Incorporate eggs one at a time until fully combined.
  5. Slowly add flour, baking powder, baking soda, cinnamon, cardamom, and salt. Gradually mix in brewed coffee until just combined.
  6. In a small bowl, combine 1/4 cup brown sugar with 1 teaspoon cinnamon.
  7. In a medium bowl, mix together flour with remaining brown sugar and cinnamon. Add grated cold butter; use your fingers to create a crumbly mixture.
  8. Spoon half of the batter into prepared bundt pan.
  9. Sprinkle cinnamon sugar mixture evenly over this layer.
  10. Dollop warmed cream cheese over the batter; spread evenly.
  11. Top with remaining batter smoothly covering cream cheese layer.
  12. Sprinkle buttery streusel topping evenly on top.
  13. Bake for 50-55 minutes or until toothpick inserted comes out clean. Allow cooling for 30 minutes before inverting onto a plate.
  14. In a bowl, whisk together powdered sugar, milk, vanilla extract, and instant coffee until smooth.
  15. Drizzle glaze over cooled cake; let set for 10 minutes before serving.
