  • 7 egg yolks
  • 14 ounces sweetened condensed milk
  • 12 ounces evaporated milk
  • ¾ cup whole milk
  • 1 ½ teaspoons pure vanilla extract
  • 1/8 teaspoon salt
  • 4 egg whites
  • 8 ounces cream cheese (room temperature)

Instructions

  1. Preheat the oven to 350°F and prepare a 9" Springform pan by wrapping it with foil if necessary.
  2. In a saucepan, melt 1 cup of sugar over medium-high heat until it turns light caramel; pour into the prepared pan and let set.
  3. Whisk together egg yolks, sweetened condensed milk, evaporated milk, whole milk, vanilla extract, and salt in a bowl.
  4. Blend egg whites and cream cheese with remaining sugar until smooth; fold into the yolk mixture and strain through a sieve.
  5. Place the Springform pan in a roasting pan filled with hot water; bake for about one hour or until set.
  6. Cool completely before refrigerating for at least three hours; invert onto a serving plate before serving.
