  • 1.5 lb boneless, skinless wild-caught salmon
  • 1 T Thai curry powder
  • 2 T grapeseed oil
  • 3 T water
  • 1 t smoked paprika
  • 1 t grated ginger
  • 1 t minced garlic
  • Juice of one lime
  • 1 zucchini
  • 1 red onion
  • 1 yellow bell pepper

Instructions

  1. In a small bowl, whisk together Thai curry powder, grapeseed oil, water, smoked paprika, grated ginger, minced garlic, and lime juice to create the marinade.
  2. Place the salmon chunks and chopped vegetables in a baking dish and pour the marinade over them. Refrigerate for 15 minutes.
  3. Preheat your grill or broiler to medium-high heat.
  4. Skewer the marinated salmon and vegetables onto skewers.
  5. Grill for 5-7 minutes or broil for about 12 minutes, turning halfway through until cooked through.
  6. While cooking, bring any remaining marinade to a boil to reduce it slightly and drizzle over kabobs before serving.
