  • 2 1/2 cups All-purpose flour
  • Dried lavender flowers
  • Vanilla bean scrapings
  • 1/4 cup Unsweetened cashew yogurt
  • 1/4 cup Vegan butter
  • 1/4 cup Coconut cream
  • 1/2 cup Prepared lavender icing
  • 4 cups Powdered sugar

Instructions

  1. In a mixing bowl, combine warm plant-based milk and active dry yeast; let sit for 5 minutes until foamy.
  2. Mix in sugar, salt, flour, dried lavender flowers, and vanilla bean scrapings until well combined. Add cashew yogurt, vegan butter, and coconut cream; knead until smooth.
  3. Place dough in a greased bowl and cover it with a kitchen towel. Let rise in a warm place for about 90 minutes or until doubled in size.
  4. Roll out the dough to ½ inch thick and cut into squares or circles.
  5. Heat oil in a deep fryer or pot over medium heat; fry beignets until golden brown on both sides. Drain on paper towels.
  6. Drizzle with lavender icing and dust with powdered sugar before serving.
