  • 1/3 cup cold butter, cubed
  • 1/4 cup sugar (for crust)
  • 2 cups sliced rhubarb
  • 3 eggs
  • 1 1/4 cups sugar (for filling)
  • 1/2 cup all-purpose flour (for filling)
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons lemon zest
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8 inch baking dish with parchment paper.
  2. In a mixing bowl, combine flour, sugar, and salt for the crust. Cut in cold butter until crumbly, then press into the bottom of the prepared dish.
  3. Bake crust for about 15 minutes until lightly golden.
  4. For the filling, whisk together eggs, sugar, flour, lemon juice, lemon zest, and vanilla extract in a separate bowl. Fold in sliced rhubarb gently.
  5. Pour the filling over the baked crust and return to the oven for another 40-45 minutes until set.
  6. Allow to cool completely before slicing into bars.
