  • 28.2 oz strawberries (fully ripe & washed)
  • 1/2 cup tapioca pearls (small uncooked kind)
  • 1/2 cup sweetened condensed milk (or condensed coconut milk for a dairy-free version)
  • 13.5 oz full-fat coconut milk (room temperature)

Instructions

  1. In a medium pot, bring 5 cups of water to boil. Add tapioca pearls and cook on medium heat for 10 minutes, stirring occasionally. Turn off heat, cover, and let soak for another 10-15 minutes until translucent.
  2. Strain cooked tapioca using a fine mesh sieve and rinse with cold water until cool.
  3. Mix room temperature coconut milk with the strained tapioca in a large bowl.
  4. Blend 17.6 oz of strawberries with sweetened condensed milk until smooth and add to the tapioca mixture.
  5. Dice remaining strawberries for garnish or mix into pudding.
  6. Divide pudding into bowls, garnish with fresh mint leaves if desired, and serve chilled.
