  • ¼ cup granulated sugar (for filling)
  • ½ cup fresh or frozen blueberries
  • 2 tbsp granulated sugar (for blueberry swirl)
  • 1 tsp cornstarch
  • 1 tbsp water

Instructions

  1. Prepare the blueberry swirl by combining blueberries, sugar, cornstarch, and water in a saucepan over medium heat. Cook until thickened; remove and let cool.
  2. Preheat oven to 350°F (175°C). Cream butter and sugars together until fluffy. Add egg and vanilla; mix well.
  3. In another bowl, whisk flour, baking soda, and salt. Gradually combine with wet mixture until just mixed.
  4. Beat cream cheese with sugar and vanilla until smooth for the filling.
  5. Form cookie dough into discs, place cheesecake filling in the center, wrap dough around it, and drizzle cooled blueberry swirl on top.
