  • 2 cups chicken broth
  • 1 cup bell peppers (mixed colors)
  • 1 cup zucchini
  • 1 medium onion
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Prepare your ingredients by washing and chopping the vegetables: slice bell peppers, zucchini, dice onion, and mince garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt, pepper, and paprika, cooking until browned (5-7 minutes per side). Remove from skillet.
  3. In the same skillet, sauté onion and garlic until fragrant (about 2 minutes). Add bell peppers and zucchini; cook until softened.
  4. Stir in rice until coated in oil; pour in chicken broth. Bring to a boil while stirring occasionally.
  5. Return chicken to the skillet, reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked through.
