  • 1.5 lbs boneless, skinless chicken thighs
  • 3 tbsp maple syrup
  • 2 tbsp Dijon mustard
  • 3 cloves garlic, minced
  • 1 tbsp fresh thyme, chopped or 1 tsp dried thyme
  • Salt and freshly cracked black pepper, to taste
  • 2 medium sweet potatoes (about 500g)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Optional toppings: toasted pecans or pumpkin seeds

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut sweet potatoes into 1-inch cubes; toss with olive oil, smoked paprika, salt, and pepper. Spread on one side of the baking sheet.
  3. In a bowl, mix maple syrup, Dijon mustard, minced garlic, thyme, salt, and pepper for the marinade.
  4. Pat chicken thighs dry and place them on the other side of the baking sheet; brush half of the marinade over them.
  5. Roast for 15 minutes; flip chicken and toss sweet potatoes. Brush remaining marinade over chicken and continue roasting for another 10-15 minutes until cooked through.
  6. Serve in bowls topped with toasted nuts or seeds and an extra drizzle of maple syrup if desired.
