  • 2 tablespoons fresh lime juice
  • 2 tablespoons avocado oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup sweet corn kernels
  • 1/2 small red onion
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1/2 cup feta cheese
  • 2 cups cooked jasmine rice
  • 1/4 cup fresh cilantro
  • 1 teaspoon Tajín seasoning

Instructions

  1. Marinate chicken thighs in lime juice, avocado oil, chili powder, cumin, garlic powder, salt, and pepper for at least 20 minutes.
  2. Heat a cast iron skillet over medium-high heat; cook marinated chicken for about 5–7 minutes on each side until fully cooked (internal temperature of 165°F).
  3. In another pan, heat sweet corn kernels until warmed through; optionally char them slightly for added flavor. Mix in diced red onion.
  4. Assemble bowls with a base of jasmine rice topped with sliced chicken, corn mixture, Greek yogurt, mayonnaise (if using), feta cheese, cilantro, and Tajín seasoning as desired.
