  • ½ cup diced red or white onion
  • 2 tablespoons fresh minced parsley
  • 3 Roma tomatoes (seeded and diced)
  • ¼ cup olive oil
  • ¼ cup red apple vinegar
  • 1 garlic clove (minced)
  • Salt and pepper to taste

Instructions
