  • 9 oz fresh cheese tortellini
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 cup corn (steamed from frozen or fresh)
  • 1 heaping cup grape tomatoes
  • 4 oz cheddar cheese (cubed)
  • 1/2 cup extra virgin olive oil
  • 1/2 cup white apple vinegar
  • 2 TBSP Italian seasoning
  • 1/2 TBSP garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Cook tortellini according to package instructions; drain and rinse with cold water.
  2. In a bowl or mason jar, whisk together olive oil, vinegar, Italian seasoning, garlic powder, salt, and pepper.
  3. Chop bell peppers and tomatoes; steam corn if using fresh/frozen.
  4. In a large bowl, combine cooked tortellini, chopped vegetables, and cubed cheddar cheese.
  5. Pour half of the dressing over the salad; toss gently to combine.
  6. Chill for at least 30 minutes before serving; drizzle remaining dressing just before serving.
