  • 4 cups romaine lettuce
  • 1 cup grape tomatoes
  • ½ red onion
  • ½ cup pitted kalamata olives
  • ½ English cucumber
  • 1 can (15 ounces) garbanzo beans
  • ½ cup crumbled feta cheese
  • 1 tablespoon lemon juice
  • 2 tablespoons red apple vinegar
  • ½ teaspoon salt
  • ÂĽ teaspoon pepper
  • ½ teaspoon oregano
  • 2 garlic cloves
  • 1 tablespoon finely diced red onion
  • 2 tablespoons feta cheese
  • ½ cup olive oil

Instructions

  1. In a large salad bowl, combine the romaine lettuce, cooked orzo pasta, grape tomatoes, sliced red onion, olives, rinsed garbanzo beans, and crumbled feta cheese. Toss gently to mix.
