  • 20 oz four cheese tortellini
  • 8 oz cherry tomatoes
  • 1 large cucumber (washed and peeled)
  • 1 small red onion
  • 1 red bell pepper
  • 6 oz banana peppers (drained)
  • 6 oz pitted black olives (drained)
  • 5 oz crumbled feta cheese
  • 1/2 cup canola or vegetable oil
  • Juice of 2 lemons
  • 2 tbsp white apple vinegar
  • 2–3 pressed garlic cloves
  • 2 tbsp minced dill weed
  • 2 tbsp minced parsley
  • 1 tsp oregano
  • Salt and pepper to taste

Instructions

  1. Cook tortellini according to package instructions and let cool.
  2. Slice vegetables: cucumber into half-moons, onion finely chopped, bell pepper diced, and tomatoes halved.
  3. Combine all vegetables with cooled tortellini in a large mixing bowl.
