  • 1 white onion, diced
  • 3 tbsp butter, sliced
  • 1 tbsp olive oil
  • 6 garlic cloves, minced

  • salt and pepper to taste
  • 1 cup cheddar cheese, shredded
  • 1/2 cup parmesan cheese, shredded

Instructions

  1. Preheat your grill on high heat.
  2. In a large mixing bowl, combine cubed potatoes, diced onion, butter, olive oil, minced garlic, parsley, salt, and pepper until evenly coated.
  3. Spray a large piece of tin foil with cooking spray and place the potato mixture in the center. Fold and seal the foil to create a secure packet.
  4. Grill the packet for about 10 minutes before flipping over; cook for another 10 minutes.
  5. Open the packet carefully to avoid steam burns and sprinkle both types of cheese over the potatoes. Reseal and cook for an additional 5 minutes until cheese is melted.
