  • 1 pound boneless skinless chicken breasts
  • 2 heads butter lettuce
  • 2 peaches
  • 1 avocado
  • 23 Persian cucumbers
  • 2 ounces feta cheese (crumbled)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons dijon mustard
  • 2 tablespoons maple syrup
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a mixing bowl or jar, combine balsamic vinegar, dijon mustard, maple syrup, olive oil, salt, and pepper for the marinade.
  2. Add chicken breasts to the marinade in a resealable bag. Seal and massage to coat well. Refrigerate for 1 to 4 hours.
  3. Preheat the grill over medium-high heat. Clean and oil the grates.
  4. Grill marinated chicken for 4–5 minutes per side until cooked through (165°F internal temperature).
  5. In the last few minutes of grilling, add peach halves and cook until caramelized (about 3–4 minutes total).
  6. Let chicken rest for 5 minutes before slicing. Assemble the salad by layering butter lettuce with grilled chicken slices, peaches, avocado slices, cucumber slices, and feta cheese.
