  • 23 boneless skinless chicken breasts
  • 4 cups uncooked pasta
  • 1 cup grated smoked cheddar
  • 1 avocado, chopped
  • 1/4 medium red onion, chopped
  • Handful of cilantro, chopped
  • 1/4 cup olive oil
  • Juice from 1/2 lemon
  • 2 dashes Italian seasoning
  • 2 cloves garlic, minced
  • Salt & pepper to taste
  • 1/3 cup plain Greek yogurt
  • 1 tablespoon BBQ sauce
  • 1/2 tablespoon vinegar
  • 1/2 tablespoon brown sugar
  • Pinch of garlic powder

Instructions

  1. Butterfly the chicken and marinate in BBQ sauce in a large Ziploc bag for 30 minutes.
  2. Whisk together the dressing ingredients in a mixing bowl.
  3. Boil salted water and cook pasta until al dente; rinse with cool water.
  4. Grill the marinated chicken on medium-high heat for about 4 minutes on each side until cooked through.
  5. Combine cooked pasta with cilantro, onion, cheddar cheese, avocado, and prepared dressing in a bowl; toss gently.
  6. Serve topped with sliced grilled chicken.
