  • 1 cup packed fresh flat-leaf parsley
  • 2 tablespoons fresh oregano
  • 4 cloves garlic
  • 1/4 to 1/3 cup extra-virgin olive oil
  • 1 tablespoon white apple vinegar
  • 1/2 teaspoon fine sea salt
  • Pinch ground black pepper
  • 1/4 teaspoon crushed red chile flakes
  • 2 large or 4 small boneless skinless chicken breasts

Instructions

  1. Prepare the chimichurri sauce by pulsing parsley, oregano, and garlic in a food processor until chopped. Add olive oil, vinegar, salt, pepper, and red chile flakes; pulse until nearly smooth.
  2. Marinate the chicken by poking holes into it and coating it with half of the chimichurri sauce in a mixing bowl. Refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat (400°F). Grill marinated chicken for 6-8 minutes per side until it reaches an internal temperature of 165°F.
  4. Serve the grilled chicken with reserved chimichurri sauce on top.
