  • 1 tablespoon smoked paprika
  • 1 tablespoon packed dark brown sugar
  • 1 teaspoon salt
  • 1 teaspoon dry mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon freshly ground black pepper
  • ½ cup ketchup
  • ¼ cup pure maple syrup
  • 2 tablespoons molasses
  • 1 finely chopped chipotle chile pepper in adobo sauce
  • 2 teaspoons vinegar
  • 2 teaspoons Dijon mustard
  • ½ teaspoon garlic powder
  • 1 lime (juiced)

Instructions

  1. Trim excess fat from the chicken thighs and place on a foil-lined baking sheet.
  2. In a small bowl, mix together smoked paprika, brown sugar, salt, dry mustard, garlic powder, chili powder, cumin, and black pepper. Rub evenly over both sides of the chicken. Cover with foil and refrigerate for 30 minutes.
  3. In a saucepan, combine ketchup, maple syrup, molasses, chopped chipotle pepper, vinegar, Dijon mustard, and garlic powder; bring to a boil then simmer for 15 minutes. Stir in lime juice before basting.
  4. Preheat your grill to medium heat. Grill chicken for 4 minutes on each side until nicely charred and cooked through (165°F internal temperature).
  5. Allow the chicken to rest for about 5 minutes before serving.
