  • 1.5 pounds skirt steak or flank/flat iron steak
  • ½ red onion, diced
  • 8 oz mushrooms, diced
  • 12 spears of asparagus
  • 4 oz arugula or spinach leaves
  • 2 avocados, peeled and sliced
  • 3 garlic cloves, grated or minced
  • ¼ cup avocado oil
  • 1 teaspoon golden monk fruit
  • 1 teaspoon chile powder
  • 1 teaspoon oregano
  • 1 teaspoon salt + ½ teaspoon salt (for vegetables)
  • ½ teaspoon sesame oil
  • ¼ teaspoon ground cumin
  • 5 tablespoons olive oil
  • 1 tablespoon lime juice

Instructions

  1. Prepare the marinade by mixing garlic, avocado oil, monk fruit, chile powder, oregano, sesame oil, and ground cumin.
  2. Marinate the skirt steak in a ziplock bag for at least 1 hour.
  3. Preheat your grill to medium-high heat.
  4. Toss diced red onion, mushrooms, and asparagus with olive oil and salt; grill until tender.
  5. Grill marinated steak for about 2-4 minutes per side for medium-rare doneness.
  6. Let the steak rest before slicing.
  7. Whisk together olive oil and lime juice for the vinaigrette.
  8. Assemble by layering greens, grilled veggies, sliced steak, and avocado on plates; drizzle with vinaigrette.
