Ingredients

Scale
  • 1.75 cups warm water (105-115°F)
  • 2 tsp sugar (optional if using instant yeast)
  • 1 packet active dry yeast
  • 2 cups bread flour (can substitute with all-purpose flour)
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil (divided)
  • 1 jar raspberry preserves (can swap with other jams)
  • 2 cups confectioners' sugar
  • 24 tbsp whole milk (as needed)

Instructions

  1. Combine warm water and sugar in a mixing bowl, then sprinkle in yeast. Let sit until frothy (5-10 minutes).
  2. Add both flours and salt to the yeast mixture, along with 4 tablespoons olive oil. Knead until smooth (8-10 minutes).
  3. Place dough in a greased bowl, cover with a kitchen towel, and let rise until doubled in size (about 1 hour).
  4. Punch down the dough, transfer it to a parchment-lined baking sheet, and stretch it to fit.
  5. Make deep indentations on the surface and fill each with raspberry preserves.
  6. Cover again and allow to rise for another 30 minutes while preheating oven to 375°F.
  7. Drizzle remaining olive oil over the dough and bake for about 22 minutes or until golden brown.
  8. Cool slightly before glazing with a mixture of confectioners' sugar and milk.
