  2. Place the lemon peels evenly into two jars and cover them with lemon juice.
  3. Seal the jars tightly and let them sit at room temperature away from sunlight for at least four days (up to one month), shaking gently every other day.
  4. To make simple syrup, whisk together sugar and water in a saucepan over medium-low heat until dissolved.
  5. Strain the infused lemon mixture through a mesh strainer, discarding the peels, then mix in your simple syrup to achieve desired sweetness.
