Jalapeno Popper Pasta Salad is a vibrant and flavorful dish that brings together the bold tastes of spicy jalapenos, creamy cheese, and hearty pasta, making it an ideal choice for picnics, BBQs, or potlucks.

  • 6 jalapenos (halved and seeded)
  • 2 tbsp avocado or olive oil
  • 16 ounces Fiber Gourmet light elbow pasta
  • 1/2 cup whipped cream cheese
  • 1 1/2 cups plain Greek yogurt
  • 6 ounces cheddar cheese (shredded)
  • Garlic powder, onion powder, pink salt, and cracked black pepper

Instructions

  1. Boil salted water in a large pot.
  2. Coat halved jalapenos in olive oil and place on a rimmed baking sheet.
  3. Broil jalapenos for about 10 minutes until charred.
  4. Cook pasta according to package directions until al dente.
  5. In a mixing bowl, combine cooked pasta with whipped cream cheese.
  6. Steam broiled jalapenos in a sealed bag for 20 minutes; then peel and chop them.
  7. Mix chopped jalapenos with the pasta mixture along with Greek yogurt and seasonings.
  8. Chill before serving.
