  • 1/2 cup unsalted butter, melted
  • 1/4 cup sour cream
  • 1/4 cup hot water
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup golden monk fruit or erythritol
  • 1 tablespoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • pinch of salt
  • 2 tablespoons butter, melted
  • 1/2 cup powdered sweetener
  • 2 teaspoons vanilla
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 1/2 cup powdered sweetener

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine almond flour, protein powder, sweetener, baking powder, xanthan gum, cardamom, and salt.
  3. Add melted butter, sour cream, and hot water to the dry mixture; mix until a dough forms.
  4. Roll out the dough between two sheets of parchment paper into a rectangle about 1/4 inch thick.
  5. Brush melted butter over the dough and sprinkle with a mixture of sugar-free sweetener, cinnamon, nutmeg, and salt.
  6. Roll the dough tightly into a log and slice into 1-inch pieces.
  7. Arrange on a baking tray lined with parchment paper and bake for 16-20 minutes until golden brown.
  8. For frosting: Mix melted butter with powdered sweetener and vanilla; drizzle over cooled rolls.
