  • 3 cups raspberries
  • 1 teaspoon xanthan gum or 2 teaspoons arrowroot powder
  • 1/3 cup + 1/4 cup sugar-free sweetener, divided
  • 1 teaspoon vanilla extract
  • 1 1/2 cup almond flour
  • 1/4 cup golden monk fruit
  • 1/4 cup walnuts
  • 1/4 cup pecans
  • 2 tablespoons hemp hearts
  • pinch salt
  • 3/4 cup unsalted butter, cold & cut into cubes

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine raspberries, xanthan gum or arrowroot powder, 1/3 cup sugar-free sweetener, and vanilla extract; mix gently until well coated and set aside.
  3. In a food processor, pulse almond flour, remaining 1/4 cup sugar-free sweetener, golden monkfruit, walnuts, pecans, hemp hearts, and a pinch of salt. Add the cold cubed butter and pulse until the mixture resembles coarse crumbles.
  4. Spread the raspberry mixture evenly inside a baking dish.
  5. Sprinkle the crumble topping over the berry mixture, spreading it out evenly.
  6. Bake in the preheated oven for about 20 to 25 minutes, or until the top is golden brown.
  7. Let cool before serving. Top with whipped cream or serve alongside keto ice cream for an extra treat!
