  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 cup sour cream or plain Greek yogurt
  • 2 large eggs (room temperature)
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest (from about 2 lemons)
  • 1½ cups fresh blueberries + 1 tbsp flour (for coating)
  • 1 cup powdered sugar (sifted)
  • 23 tbsp fresh lemon juice (for glaze)
  • 1 tsp lemon zest (optional, for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 loaf pan and line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In another bowl, whisk together the vegetable oil, sugar, sour cream or yogurt, eggs, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and fold gently until just combined.
  5. Toss the blueberries with 1 tablespoon of flour to coat them and fold them into the batter.
  6. Pour the batter into the prepared loaf pan and smooth out the top. Bake for 55–65 minutes or until a toothpick comes out clean.
  7. Allow to cool in the pan for 15 minutes before glazing with a mixture of powdered sugar and lemon juice.
