  • 1 pound baby potatoes
  • 11 1/2 pounds salmon filet
  • 1 bunch asparagus
  • 4 tablespoons extra virgin olive oil
  • 4 tablespoons salted butter
  • 2 tablespoons cajun seasoning
  • 1 tablespoon lemon zest plus 2 tablespoons lemon juice
  • 1/2 cup grated parmesan
  • Arugula, fresh basil, and dill for the salad

Instructions

  1. Preheat your oven to 425°F.
  2. On a large baking sheet, toss halved baby potatoes with 2 tablespoons of olive oil, salt, and pepper. Bake for about 15 minutes.
  3. Add salmon (seasoned with remaining olive oil and cajun seasoning) and asparagus (tossed with parmesan) to the pan. Bake for an additional 10-15 minutes until salmon is cooked through.
