  • 1/2 cup whole-grain breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 lemon (zested and juiced)
  • 1 clove garlic, minced
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Olive oil for baking

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, lemon zest and juice, garlic, egg, oregano, salt, black pepper, and optional red pepper flakes. Mix until just combined.
  3. Form the mixture into small balls (about 1 inch) and place on a baking sheet lined with parchment paper.
  4. Drizzle olive oil over the meatballs and bake for 20-25 minutes until golden brown and cooked through (internal temperature should reach 165°F/74°C).
