  • 2 tbsp lemon zest
  • 3 tbsp culinary lavender
  • 3/4 cup salted butter, room temperature
  • 3 large eggs
  • 3 tbsp lemon juice
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup whole milk
  • 1 1/2 cups powdered sugar, sifted
  • 3 to 4 tbsp whole milk (for glaze)
  • 1/2 tsp lavender extract
  • 2 to 3 drops purple food coloring

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare a 9×5-inch loaf pan with parchment paper.
  2. Whisk together flour and baking powder in a bowl; set aside.
  3. In a large bowl, combine sugar, lavender, and lemon zest; rub together to release flavors.
  4. Cream butter into the sugar mixture until fluffy. Add eggs one at a time, mixing well after each addition, then stir in lemon juice.
  5. Gradually mix in half the flour mixture, followed by milk, then the rest of the flour until just combined.
  6. Pour batter into the prepared pan and smooth the top. Bake for 50-60 minutes or until a skewer comes out clean.
  7. Cool in the pan for 15 minutes before transferring to a wire rack.
  8. In a medium bowl, whisk together sifted powdered sugar with whole milk and lavender extract until smooth. Add food coloring to achieve desired tint.
  9. Drizzle the prepared glaze over the cooled cake loaf.
