  • 1 teaspoon active dry yeast
  • 1 tablespoon sugar

  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tablespoon fresh thyme
  • 1 tablespoon olive oil (for drizzling)
  • 1 tablespoon honey
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Activate yeast by mixing warm water, sugar, and yeast in a bowl. Let it froth for 5 minutes.
  2. In a separate bowl, combine flour and salt.
  3. Add the yeast mixture and olive oil to the flour mix; stir until dough forms.
  4. Knead dough on a floured surface for about 8-10 minutes until smooth.
  5. Place dough in an oiled bowl, cover with a towel, and let rise for 1 to 1.5 hours until doubled in size.
  6. While dough rises, mix ricotta, mozzarella, Parmesan, lemon zest, and juice in a bowl.
  7. Preheat oven to 475°F (245°C) with a pizza stone or baking sheet inside.
  8. Roll out dough into a thin round shape on parchment paper.
  9. Spread cheese mixture over dough and sprinkle fresh thyme on top.
  10. Bake for 10-12 minutes until crust is golden brown.
