  • 1/2 cup panko
  • 1 large egg
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely diced red onions
  • 1/4 cup finely diced sun-dried tomatoes
  • 1/4 tsp dried dill
  • 1/4 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1 tbsp fresh mint (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together ground chicken, panko, egg, feta cheese, red onions, sun-dried tomatoes, dill, oregano, garlic powder, and salt until well combined.
  3. Roll the mixture into about 15 golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  4. Bake for 25-30 minutes until the meatballs are cooked through and golden brown.
  5. Let rest for 2 minutes before serving with tzatziki sauce or as desired.
